Barnyard Millet Dora Cake is a soft and layered pancake dessert prepared using barnyard millet flour and natural sweeteners. Inspired by pancake-style treats, this recipe offers a healthier alternative by incorporating millet flour instead of refined flour.

Ingredients

  • Barnyard millet flour – 100 g
  • Baking soda – 1 g
  • Sugar powder – 20 g
  • Honey – 5 g
  • Condensed milk – 30 g
  • Milk – 150 ml
  • Dark chocolate – 30 g
  • Vanilla essence – 2 ml
  • Oil – 1 tbsp

Preparation Method

  1. In a bowl, combine barnyard millet flour, baking soda, sugar powder, honey, condensed milk, and vanilla essence.
  2. Add milk gradually and mix to form a smooth batter similar to dosa batter consistency.
  3. Heat oil on a dosa pan. Pour a ladle of batter and spread slightly to form a small thick pancake.
  4. Cook until bubbles appear on the surface, edges turn dry, and the base becomes golden brown. Flip and cook the other side.
  5. Repeat the process to make multiple pancakes.
  6. Melt dark chocolate using a double boiler method and transfer to a bowl.
  7. Place one pancake on a plate, spread melted chocolate evenly, and stack another pancake on top.
  8. Repeat layering for 4–5 pancakes.
  9. Drizzle honey over the stacked pancakes.
  10. Cut into slices similar to pizza style.
  11. Serve warm.
