Barnyard Millet Custard Ice Cream is a rich and flavorful dessert that combines the goodness of millet milk with custard and natural ingredients. This recipe provides a healthier option compared to traditional ice creams while maintaining a creamy texture and pleasant sweetness.

Ingredients

  • Barnyard millet gruel – 100 ml
  • Milk – 200 ml
  • Custard powder – 15 g
  • Sugar – 35 g
  • Cornflour – 15 g
  • Tutti frutti – as required
  • Water – as required

Preparation Method

  1. Boil dehulled barnyard millet grains in excess water and extract about 100 ml of millet milk or gruel.
  2. In a large pan, combine regular milk and millet milk. Boil and stir occasionally for about 15 minutes.
  3. Add sugar and mix well until dissolved.
  4. In a separate bowl, dissolve custard powder and cornflour in a little milk to form a lump-free mixture.
  5. Keep the flame low and add this custard mixture to the boiling milk while stirring continuously.
  6. Continue stirring until the mixture thickens to a creamy consistency.
  7. Remove from heat and allow it to cool completely.
  8. Add tutti frutti or dry fruits and mix well.
  9. Pour the mixture into popsicle moulds or containers.
  10. Cover and freeze for about 8 hours or until fully set.
  11. To demould, dip the mould briefly in warm water for easy removal.
  12. Serve chilled.
