Ingredients

  • Little millet – 1 cup
  • Water – 2 cups

  • Onion – 1 (chopped)
  • Carrot – 1 (chopped)

  • Mint leaves – 1 cup
  • Coriander leaves – ½ cup
  • Green chilies – 2
  • Ginger – 1-inch piece
  • Water – as required

Whole Spices:

  • Cinnamon stick – 1 small piece
  • Cloves – 2–3
  • Cardamom pods – 2

Preparation Method

Step 1: Cook Millet

  1. Wash little millet thoroughly.
  2. Cook in a pressure cooker with water, salt, and bay leaf.
  3. Cook for 1 whistle on medium flame.
  4. Allow it to cool slightly and fluff it.

Step 2: Prepare Mint Chutney

  1. Grind mint leaves, coriander leaves, green chilies, ginger, and a little water into a smooth chutney.

Step 3: Prepare Base

  1. Heat oil in a pan.
  2. Add whole spices (cinnamon, cloves, cardamom) and sauté for a minute.
  3. Add chopped onion and sauté until translucent.

Step 4: Cook Vegetables & Chutney

  1. Add chopped carrots and cook for a few minutes.
  2. Add mint chutney and cook until the raw smell disappears.
  3. Add salt to taste.

Step 5: Combine

  1. Add cooked little millet rice.
  2. Mix gently to combine evenly.
  3. Turn off the flame.

Step 6: Serve

  1. Serve hot.
