Ingredients

Main Ingredients:

  • Little millet – 1 cup
  • Mushrooms – 200 g (cleaned & chopped)
  • Onion – 2 (sliced)
  • Green chilies – 2–3
  • Ginger-garlic paste – 1 tablespoon
  • Coriander leaves – ½ cup
  • Mint leaves – ½ cup
  • Water – as required
  • Salt – to taste

Spices:

  • Red chili powder – 1 teaspoon
  • Garam masala – 1 teaspoon

For Tempering:

  • Ghee – 1 tablespoon
  • Oil – 1 tablespoon
  • Bay leaf – 1
  • Cinnamon stick – 1 small piece
  • Cloves – 3–4
  • Cardamom pods – 2–3

Preparation Method

Step 1: Roast Millet

  1. Dry roast little millet for 1–2 minutes.
  2. Keep aside.

Step 2: Prepare Masala Paste

  1. Grind coriander leaves and mint leaves with a little water to make a smooth paste.
  2. Keep aside.

Step 3: Prepare Base

  1. Heat ghee and oil in a deep-bottomed vessel.
  2. Add bay leaf, cinnamon, cloves, and cardamom.
  3. Sauté until aromatic.

Step 4: Cook Masala

  1. Add sliced onions and fry until golden brown.
  2. Add ginger-garlic paste and green chilies.
  3. Add red chili powder, garam masala, and salt.
  4. Add prepared coriander-mint paste and mix well.

Step 5: Add Mushrooms

  1. Add cleaned and chopped mushrooms.
  2. Add a little water and cook until mushrooms soften.

Step 6: Cook Biryani

  1. Once it starts boiling, add roasted millet.
  2. Add required water for cooking millet.
  3. Add a few coriander and mint leaves.
  4. Mix well and check salt.
  5. Cover with lid and cook on low flame for 25–30 minutes.

Step 7: Serve

  1. Turn off the flame and let it rest for a few minutes.
  2. Serve hot.
