Barnyard Millet Payasam is a traditional and nutritious dessert prepared using barnyard millet, milk, and natural sweeteners. This recipe offers a healthier substitute for rice-based payasam, providing better fiber content and improved digestion.

Ingredients

  • Dehulled barnyard millet – 50 g
  • Sugar – 50 g
  • Jaggery – 30 g
  • Milk – 500 ml
  • Saffron – 4–5 strands
  • Dry fruits (cashew nuts, almonds, pista) – 50 g
  • Cardamom powder – 3 g
  • Ghee – 30 ml
  • Water – as required

Preparation Method

  1. Cook barnyard millet in a vessel with water in a 1:4 ratio for 5–7 minutes until partially cooked.
  2. In a separate pan, boil milk for 10–15 minutes on medium flame.
  3. Add the partially cooked millet and saffron to the boiling milk. Cook for 10–15 minutes until the millet softens and blends well.
  4. Add sugar and jaggery, and stir gently until fully dissolved and combined.
  5. Heat ghee in a small pan. Add dry fruits and roast until golden brown.
  6. Add the roasted dry fruits along with ghee to the payasam.
  7. Add cardamom powder and mix well.
  8. Serve hot or chilled as desired.
